how can update the PHP version in myvesta ?

You can install the php version as you wish, tweaks will be also in there if you install this way - viewtopic.php?f=18&t=52
Make sure you don't overwrite anything, just install as recommended and you will keep the tweaks.

Then you go on your server, packages and edit the php version for the users, don't forget to restart apache.

No need to restart Apache.
Also, changing 'Packages' will not change PHP version on your existent sites.

To change PHP version on your existent sites you need to go to WEB -> EDIT yourdomain -> select PHP-FPM-7x in "Apache template" section.
