Templates -Optimal Configurations for Wordpress and Static

Hi Folks,
New to MyVesta and Vesta in general. Thank you all for your very impressive CP, and contributions herin.
I have previously used DirectAdmin and CPanel, but trying my hand at this.
I am a bit confused in regard to the different templates, especially as pertains to MyVesta differences and new options.
Here is what i would like to achieve:

Host a few high volume WordPress with e-commerce and static sites that perform fast and trouble-free.
Have phpmy admin database
safe and secure
emai.

SSL necessary, should i be using let's encrypt or my cloudflare account.

I have read that FPM is the way to go for speed, but confused about the templates listed as PHP-FPM 7.3 Public or not public, default or hosting under apached2 template
I like the denial of service script concept, but do not know how to install the template, and what this will impact.

Not certain what i will be missing if i choose any of these.
Under NGINX, still more options, not certain what to use.
I guess the best question would be :
Template recommendations for 32GB RAM dedicated server hosting of Wordpress with ECommerce plugin, Wordpress without ecommerce, and static site.
I know there are several posts about this, but a guide of the options and what they entail would be great. Perhaps if this exists, please point me there.

PHP-FPM-73-public is template for Laravel projects, difference is just docroot folder, it's /public_html/public/ instead of /public_html/ (which is default).
hosting and default templates are just symlinks to PHP-FPM-73, for compatibility purpose with official Vesta.

I like the denial of service script concept, but do not know how to install the template, and what this will impact.

hosting template is just fine, because it's default.
force-https is the same as hosting, except it always redirect visitors to https.
